Chef Aïcha trained at École Ferrandi in Paris and spent four years at a patisserie in the 6th arrondissement before moving back home. The ovens are small. The team is four people. Everything that leaves the counter was piped, folded, or glazed that morning.
Opened quietly in 2021. The first month we sold seventeen croissants a day. Now it's closer to two hundred, but the recipe hasn't changed and the butter still comes from the same supplier.
